DAY THREE – Paleo Week

Welcome back!
I woke up at 7:30 today for an 8:30am class, and really really didn’t want to get up.  I’ve noticed that it’s a lot harder to get out of bed this week than last week (idk if it’s because of the food I’m eating or not).

For breakfast, I made myself two eggs and topped it with half of an avocado.  It was pretty good!  I miss my flaxseed pita bread though, which I would’ve used as a wrap for this.


After calc, I had to go to work again.  Not a very exciting day.  Not gonna lie, I miss my carbs hahah.  It’s really hard to find easy snacks on a paleo diet because there really isn’t a lot to choose from except for veggies, nuts, and fruit.  Which isn’t bad, but it gets a little old.  Also I can’t have hummus with my veggies because chic peas are a legume!  Sad.  I sort of think that vegan might be a bit easier.

I had a sort of a weird lunch today because I was at work and had to grab something really quick.  So I had a green apple w almond butter, a bunch of strawberries, and a kale salad.  It was pretty good.  Oh and I found these dairy-free, organic chocolate chips that are awesomeeee.

I ate some fruit and nuts as snacks throughout the afternoon.

For dinner, I had a bunch of my friends over and we all made spaghetti squash, roasted butternut squash, arugula salad (w peppers, avocado, onions, etc), turkey burgers, pasta, and a quinoa dish.

It was wicked fun and tasted really good!  I made a holy mess in the kitchen and it took ages to clean up (also because I made slutty brownies – half brownie, half cookie, and definitely not paleo – for the lacrosse game tomoro).

tbh I’m not feeling super energized or awesome… Like last week I felt lighter and motivated and stuff but I’m not getting that same feeling.  We’ll see if it changes tho!  Also if anyone has any tips or questions for me, let me know!  email:
