So I woke up today at 8:00am and did not want to get up, mostly because I had to go into work at 9:00. So I went downstairs and made myself breakfast. I thought it would be a good idea to have eggs again, but maybe it wasn’t because I ended up dropping some eggs on the ground and they broke, of course. What a great way to start the morning, right?! And let me tell you, eggs might be the most annoying things to clean up off of the floor. But anyways, I ended up making my self two eggs (which kinda stuck to the pan because we are out of pam, so they aren’t that pretty) and berries. I had coffee too. I managed to read the work schedule wrong and showed up 10 minutes late to my shift because my shift actually started at 8:45…. oh well. I hope the rest of my day goes a little better hahah.
ALSO very sad about this… Apparently peanuts aren’t paleo! Because they’re actually a legume, not a nut. What am I going to do without my peanut butter! (Luckily I still have my almond butter). Also sad because I did eat a decent amount of peanuts and peanut butter yesterday… oops
Oh I almost forgot, I made a paleo no-bake “cookie” last night. It was a combo of coconut oil, shaved coconut, cocoa powder, honey, and almond butter. It actually tasted really good but looked horrible! It looked like a dark brown, chunky blob, which you can see here:
AND my favorite hummus company (Cedar’s) followed me on Instagram today! How exciting! (I feel like this is something only I would get excited about lol – but let me know if you’re excited toooo).
For my lunch break, I went to my friend Anna’s house which is across the street from work. I forgot that she’s vegetarian and so is most of her family, so I had an issue finding stuff to eat! I settled on lettuce wraps with sautéed mushrooms and lots of guac. It was SO good. I also had an apple with almond butter and some cashews.

When I got home from work later, I ate a half of a grilled chicken breast before heading off to a lacrosse game. (my fav thing ever is grilled chicken w ketchup. sounds weird, tastes good). And I snacked on some almonds before dinner.
For dinner, I’m making iron skillet salmon with roasted brussel sprouts! I’m hype because I literally love salmon and i love brussel sprouts. The recipe I used is here
I cooked the salmon with the skin on, and it’s super easy with salmon because the skin literally just falls off when you cook it.
I also cooked it in an iron skillet – super easy.
After dinner, I went to a Zumba class with my friends Nicole, Kravets, and Will. It was fun, except I am literally the WORST dancer ever. So due to me sucking at dancing, zumba was wicked hard. I really wish I could dance, but there are things in life that I’m just not meant to be good at!
